麻布十番にあります、”鮓職人 秦野よしき”さんへお伺いしました。
大将の秦野さんは、とても気さくな方でたまにオヤジギャグも入りながら、
楽しいお話を聞かせて頂きました~!英語も達者だとか!
場所は、麻布十番駅の7番出口から徒歩数分。ビルの3階です。
カウンター席の後ろはガラス張りで、外の通りが見えるようになっていました。
清潔感のある店内で、接待にもデートにも使えそうなお店です。
最初はつまみから。
1品目のパイは、乾杯の”パイ”だとか(笑)
その後も、帆立の豆乳スープや、牡蠣の燻製など、
フレンチやイタリアンの技術が入った創作が続きます。
どれも手が込んでいて美味しく頂きました~!
握りは赤酢を使ったシャリが特徴。
定番のネタもあれば変わったネタもあり、他にはない寿司が味わえます。
”アオリイカ”は、細かく切り込みが入っていて柔らかい!
大将曰く、カットの革命「ペレストロイカ」!(笑)
”茄子”は軽く揚げてありました。
油っぽさもなく、優しい出汁が美味しかったです。
”雲丹”は手渡しで!
ひんやりと冷たいネタでした。濃厚な雲丹の風味が良くわかります。
美味い…!
最後は甘い玉子焼きで。
キレイな焼き目で、チーズケーキのような味わいでした。
コース内容、大将の人柄も含めて、とても満足の内容でした。
ついつい通いたくなってしまうお店です。
