シャリとネタの温度を1度刻みで制御していることで有名な『鮨なんば 日比谷』。
常連様にお誘い頂いて訪問することができました。感謝です。
店は真新しく、清潔な雰囲気。スタッフがキビキビ動いてます。さすが高級店。
コースはおつまみから。
品数多く、どれも仕事を施した珍味が並びます。
シンプルなイイダコとか焼き穴子に ほっとしました。
おつまみの後、いよいよ握りのコースがスタート
温度管理が注目されてますが、素材の寝かし方やシャリに載せる前の包丁の入れ方など食感にこだわった処理がされていて、一貫一貫にひと手間もふた手間もかけられてます。
目の前の板さんの作業を見ていると、鮑では包丁の入れ方を工夫して以前とは変えているとのこと。尽きない探究心で進化が止まらない、と言うところでしょうか?
常連さんが通いたくなる訳ですね。
