金沢の夜です。
2ヶ月前から予約して楽しみにしていた『飛』さんに伺います。
店内は真新しく、壁には一面墨絵のような絵が嵌め込まれていて、落ち着いた雰囲気です。
一斉スタートというわけではないようですが、この日は開店の6時から満席でした。
まずは挨拶がわりの地物を金沢の地ビール(金澤麦酒)と共にいただきます。
▫️マハタ アカニシガイ
富山湾のマハタはプリプリ、噛むと甘みを感じます。
アカニシガイ コリコリした食感。
▫️鯖の棒鮨、鯖
棒鮨は関西では定番。つまみの鯖は軽く炙ってあります。
ここから日本酒を。
◇林 山田錦
富山のお酒。県外にはあまり出回ってないらしい。
オーソドックスな味わい。旨味と香りのバランス良し。
▫️鰤(ぶり)食べ比べ
奥:背のほう、 柔らかいシャリ
手前:砂ずり シャリじゃなく大根おろしでした。
▫️うなぎの海苔巻き
海苔はパリッと
シャリはかなり暖かくて風味が引き立つ。
◇吉田蔵u 石川門
すこしエステル香を感じる、爽やかな酒。
▫️香箱ガニ
香箱ガニとしては大きめのサイズ。足の身と外子が一杯詰まってます。
▫️アマエビのこのワタがけ
濃厚な風味。これは酒が進む
▫️クルマダイ 昆布締め
つまみとして供されました。しっかりした旨み。
▫️のどぐろの蒸し寿司
これは金沢ならではの一品。
うまみ濃厚で最高。やや強めの酸味のシャリもいい。
初めて出会った味わいに感動。
▫️マグロ漬けとネギの巻物
富山県のマグロ漬けを炙ったネギトロ巻き。
▫️白貝握り
これは初めて食べるかも。あっさり美味しい。
◇勝駒
富山の酒。フルーティで甘口、米の旨味が一体となって美味しい。

寝かされて旨味がよく出てます。
▫️ズワイガニの蒸し寿司
蟹味噌ものって濃厚な美味しさ。
東京では出会えない一品ですね。
▫️白子のシャリに柚子飯
シャレの効いた一品。たっぷりの白子の上に柚子風味の酢飯が載ります。酢飯があることで、白子の濃厚さが緩和され、ややあっさりとした味わいになります。

大将の軽妙なトークとともに満腹になるまでお寿司を堪能できました。
関東の寿司とは一味違う、美味しさ。ここでしか味わえない寿司とお酒に満足です。
