館林にある鮨の名店『鮨おばな』にやって来ました。予約が取れないお店ですが、常連のレビュアー様にお誘いを受けて・・・
感謝です。
お店は駅から15分くらい。住宅街というか、歴史のある地区の一角にあるモダンな建物。
大将と女将さんのお二人で切り盛りされてます。
コースは、本あら、鰹などの刺身から始まります。
鰹のたたきは藁焼きで絶妙の入れ。焼き目がサクッとして香りもいい。出だしから仕入れにこだわった上質なネタと大将の仕事が光ります。
つまみは10品ほどあり、どれも甲乙つけがたいのですが、あん肝のような牡蠣やのどぐろの肝など珍味もあり、日本酒が進みます。
握りは、ナカズミ(コハダの大きいの)や春子鯛、漬け、トロなどオーソドックスな江戸前のネタから、自家製醤油漬けのイクラやほっき貝など、一味違うものまで季節の味わいを楽しめました。
シャリとネタに一体感があるというか、ネタの良さを引き立てるシャリも印象的でした。
大将は手は白いけど、腕はよく日焼けしてるのでゴルフ焼け?と思ったらサーフィンをされているとのこと。
手は、寿司を握る時のことを考えて、焼かない様にしているのだそう。
気さくな大将と、気遣いの行き届いた女将のサービスでゆっくりと過ごせました。

前半はつまみ中心
▫️本あら
いきなり高級魚がつまみで。熟成されて旨い。塩、わさびで。
▫️鰹のたたき
表面がサクッとした食感。藁焼きの香りもほどよくついて、炙りたてならではの味わい。
▫️雲丹パフェ
カクテルグラスに入った雲丹。下がムラサキ雲丹、上が利尻のバフン雲丹。
▫️鮑
▫️黒ムツ
焼いた黒ムツをシャリの上に。 半分食べたところで出汁茶漬けに。
▫️ほっき貝の貝柱
これは珍しい。
▫️さんま
適度に脂の乗った秋刀魚。これ位の脂のノリだと生も良い。
▫️牡蠣
あん肝のような味わいに仕上げられた牡蠣。珍しい。
▫️コノシロ
コハダの成長したもの。握りで出るのは珍しいですね。
▫️のどぐろの肝
後半は握り中心で

シンコ→コハダ→ナカズミ→コノシロ と名前が変わるとか。
▫️イクラ醤油漬け
自家製醤油に付けられたイクラ。旨みが強い。

厚岸の鮪。熟成がいい。
