静岡で天ぷらだったらここがNo.1でしょう。
新鮮な魚介類、野菜、油、塩、お酒にこだわり、技術にこだわる大将ですが、けっして頑固者をイメージさせず人当たりもよくさわやかな気持ちいい人柄の大将です。
油は温度の異なる2種類を使い分け、沢山食べてももたれないように考えてくれています。
以前知人の料理人に天ぷらをうまく揚げるコツは何かと質問したら、油と会話をすることかな、なんてクサい事を言われましたが、ここではそれが納得できるように思います。
1品1品ゆっくりとお客のペースに合わせて揚げてくれるので最高の状態で味わうことができました。

途中抜けているものもあるかもしれません(汗)がどれをとっても美味しくいただけました。特にアナゴは伊勢若松のアナゴでまだ旬一歩手前らしいですが香りといい濃厚な旨みといい上質なものでした。アナゴをさばく大将のパフォーマンスも楽しめます。
