2026/1/22 常連のビジネスフレンドに連れられて青山のこちらへ。地下の店内扉を開けると洗練された店内に入ります。テーブルはグレード感じる個室タイプで上質な環境です。サラダから始まり、提供されるお肉は、とても希少な部位を鮮度高いものです。
サラダの次にキムチ・ナムルの盛り合わせでビールをググッと進めます。山芋のキムチ漬は歯応えよかった。次にカラスミと大葉の握り飯。マッコリ片手にタン塩など塩モノ3種、脂ののった赤身4種を堪能。タレに頼らずとも肉そのものが旨い。ここで卵スープでひといき。次が看板メニューの和牛スライダー(ハンバーガー)。最初はバンズと和牛が分かれて出され、そこからスタッフの方々目の前で調理。バンズ・肉と積み上げた上に、なんとトリュフを大量に塗してくれます。バンズの帽子被せて2分割し、いただく。バンズと和牛の一体感が唯一無二のスライダーです。このあと柔らかいロースをおろしポン酢で楽しみ、いよいよ希少部位「ザブトン」へ。その前にお酒を白ワインへ。ロワール地方の品種シュナンブラン、しっかり茶色みを帯びた華やかな味わいがとてもいい。ザブトンは卵の黄身とタレにつける。口の中でふわりとろける食感がたまらない。しばらく余韻に浸って、仕上げの冷麺、デザートへ。量は少しずつでも高級部位ばかりでお腹がいっぱいになります。創作とも言えるステキな肉料理の連続で感動しました。
