大将は割烹料理だってお手の物

だし巻き玉子、茶碗蒸し付き
当日水揚げの魚は鮮度が良すぎて
シャリに合わないので使わず
寝かせ、塩をあて、酢締めなどにすることで
ネタがシャリと馴染む頃合いとなったら
ようやく握りとして出せる
この「準備が八分」だと仰っていました
カウンター各々の皿に乗せてもらった握りには
ハケで醤油が塗られ
皿からとって口に頬張るスタイル
味付けが完成していて
醤油をつけることがないなんて
回転寿司しか知らない私は驚く……

一柵から4人前のフグ刺しを切り出す
繊細で美しい所作も見られて
カウンターは楽しい
