『東のすきやばし次郎、西の小松弥助』
『国宝級の寿司職人』と称される森田一夫さんの
再開した小松弥助さんへ伺いました。
金沢駅東口より徒歩3分程。旧日航ホテルの裏、
和倉温泉加賀屋グループ金沢茶屋別館の1階にあります。
金沢茶屋。趣きある外観です。館内へ入るとグーンと
ライトがおとされテーブルも輪島塗りで漆の香り漂う
とても雰囲気が良いロビーです。
11時半~、13時~、14時半~のお昼3回転の営業。
今回は13時~のカウンターのお席でしたが、多少、
時間のずれは生じるので案内されるまでをロビーで
待機しましたが冷たい麦茶まで供されて
加賀屋さんのサービスがうかがえます。
13時半近くになっていたでしょうか。席に着座し
森田さんに挨拶をしてからビアで乾杯、その後は
冷酒をいただきました。
目の前で大きな赤イカ3枚重ねの卓越した包丁さばき。
これが自然なパフォーマンスになり盛られた赤イカは
芸術的で美しかったです。
いただきましたおまかせコースの流れは…。

大雑把に見えますがタネには細かな包丁入れが
してありお口に入れた瞬間に独特のふんわり感を
残しどれも本当に美味しいです!
西のお寿司屋さんほどではありませんがシャリは
東のお寿司屋さんより絶妙な甘さでソフト。妙に
落ち着き捨てシャリなく1回のギュッと握る技に
均等に空気が入る。
リズムカルで無駄がない動き。カウンター後席の
お客さんの声までに耳を傾けながら目配り、気配り、
ユーモアな会話にお弟子さんへの指示は小声で…。
人間的温かさ、包容力が伝わってくる。それが空感に
だけでなく1貫ずつの握りからもふわっと感じられる。
タネがズラーッと多く並ぶわけでもなく種類も控え目
創作が入るわけでもなく…私…初心に戻り心底、
素直に美味しいと感動しました。
