~大雪の御料理~
【松の実の浮いたおぶ】と【食前酒】をいただき、Startです。
【先付】
雲子と丹波しめじ・菊菜・九条葱
立派な丹波しめじです。菊菜の香りと共に。
【椀物】
鯛と蕪の椀(三つ葉)
吸い地が塩梅よく決まっています。蕪がしっかりと美味。
【向付】
よこわとぐじ焼霜(貝割れ・茗荷・酢橘・土佐醤油・ポン酢)
盛り付けが好きですね~。共に質が良く、何も付けずいただいたり、あしらいと一緒にいただいたり。
【焼物】
鰆の幽庵焼き(菊蕪・酢橘)
幽庵地が絶妙~。菊蕪がきつくないのがいい!口直ししても鰆の香がほんのりと♪
【お凌ぎ】
安納芋の飯蒸し(銀杏・胡麻・振り柚子)
お芋・銀杏・飯の3つの甘みが素敵。もっと欲しい。。
【鍋物】
蟹と蕪の鍋(舞茸・九条葱・銀杏・木耳・百合根)
炊き合わせがわりに。蟹がどっさりと入ったかぶら蒸しのしっとりお鍋バージョン♪スルッと飲めちゃいます。
【強肴】
サーモン・大徳寺麩・若布・ばい貝を土佐酢ジュレにて
しっとり、くにゅ、するっ、こりっと食感の妙に土佐酢の酸味を。とりわけ、くにゅっとした利休麩の食感が好き。
【飯物】
土鍋ごはん・香の物・赤だし・鼈ちりめん
土鍋ご飯の美味しい事!ふっくらと香り良く、甘みも申し分なく♪逸品のおじゃこも楽しみながら。
【水物】
わらび餅と柿
良かった~、水物が甘過ぎず。
『岩さき』さんのお料理はどの皿も味の濃淡がほど良く、定まっています。『なかひがし』さんのお昼と並ぶ満足度♪器も素晴らしく、お料理も美しい。華美すぎず、それでいて『祇園 丸山』さんの美しさも受け継いでいるお料理です。加えて、女将と大女将のトーク♪ホスピタリティー溢れる接客、心地よい名店です。笑顔で帰れますよ♪
