一月成人式の頃スキー宿としては最も繁忙かつ稼ぎどきのはずなのだがこの村の生粋の男どもは何はともあれ道祖神の火祭りに浮かされて、まともに働かず、蕎麦屋はすぐ麺切れし、休業店も数多あり、ここサンアントンのシェフも長期戦線離脱で、代わりに街から凄腕のシェフが馳せ参じ今週限りのスペシャルなディナーを堪能させていただきました。今回は近々山梨で店を出される鈴木シェフによるなんと水焚きをイノベーティブに仕立てたコース。こういう最も現代の料理の進化と縁遠そうな鍋がセンスと技量によって新しい美味さを生み出せることに大拍手な一夜
