愛媛県愛媛県松山市二番町
2014年11月OPEN。大将の猪野氏は、様々な飲食店を経験された後、松山市の「江戸前 一朗」にて約4年の鮨修行を経て、此方を独立OPEN。地元愛媛の旬魚を中心に、鮪は豊洲の鮪仲卸「結乃花(ゆのか)」から。以前はお好みアラカルトでも対応されていたが、現在はコースのみ。

インスタ見ても分かりますが、本当に全国の鮨屋を自ら巡って研鑽を継続しており、喋ってても、相当に交友関係が広く、人脈も強そうなのが伝わる。地物の旬魚をメインに江戸前の仕事も入れながら、日々の研鑽の中から学んだ技術が細かいところにまで活かされているんでしょう。心もお腹も満たされるつまみと握りのコース♩
将来的には壁に木札かけて、奥さまと二人でもう少しハードル低い、お好み対応の町寿司的なお店をやりたいなんて仰ってました。とっても良いですね、そんな「鮨 いの」も見てみたい、楽しみです♩
また愛媛に行った際には、伺いたいお鮨屋さん。
