熊本県熊本市中央区坪井
ご主人は熊本の「鮨小大楼(こたろう)」ご出身で、2016年に独立。23年4月に現地移転OPEN。ご夫婦経営。外観も内観もシックでお洒落空間。カウンターは檜を探したが、適当なのが無く、40年ものの自然乾燥の欅を使用。ご主人は、話していてとても人当たりよく、勉強熱心そうで、腰も低く素晴らしい接客であり、お人柄。

【つまみ】
・ヤイトガツオ(長崎)
宮崎日向備長炭にて炙り。超絶美味し。脂のノリも完璧な過去一のヤイト。
・白皮カジキ(長崎佐世保)
白皮カジキの背中。
・スジアラ竜田揚げ
沖縄ではアカジンミーバイ。
・渡り蟹といくら醤油漬け
タイワンガザミと北海道いくらの醤油漬け。
・カジキマグロ塩焼き
大トロのお腹の筋部分の砂ずりの塩焼き。京都の黒七味で。
つまみは薄切りが特徴的だが、かなり全体のボリュームもしっかりで、コスパ良好。

河内町の海苔と鴨頭葱。
所作がきれい、大将の目の前に座らせてもらったのもあるが、高さがベストで目の前で握りのLIVEを堪能。一斉スタートではなく、この日も18:00〜、18:30〜、19:00〜バラバラスタートであったが、いずれのスタートでも最後の方は揃ってくる感じ。私は18:00〜予約で、21:30まで約3時間30分とゆっくりモード。味も雰囲気もTotalすごく気に入りました。こちらに伺うために熊本に来たい、そう思える素晴らしきお鮨屋さん♩
