After searching the rural mountainous areas in Nagano, driving through narrow streets alongside dangerous mountain cliffs, I have to say that Suisha did not disappoint. I thought I was at somebody's house at first. But upon entering, I found myself in a tatami banquet hall with large low tables filled with soba gourmets. A Japanese tourist (Yes, in Japan!) was taking pictures of his soba. I knew I had found the place. A kind underaged waiter (son of the owner, presumably), sat me down and presented me with preserved cucumbers while I waited.
I ordered the coursely ground cold buckywheat noodles, which came with dipping sauce, nori (seaweed), wasabi, ground radish and scallions on the side. The soba is entirely organic grown without chemical pesticides, and handmade, so the length and width varied compared to machine-prepared soba which is all of the same length and thickness, or thinness. The soba was firm, and the buckwheat taste explodes in your mouth! I I don't have allergies to wheat, but I thought I might have one. Its rich taste made me try desperately to grab every strand left on my dish!
In the end, I didn't want to leave empty handed so I bought a sweetened dried buckwheat snack for the road. If you have a car, live near Matsumoto city in Nagano, and want an adventure, find this place!
