TONJINCHI is the number one rated ramen in Toyama. Located in Himi city, TONJINCHI is a small ramen shop along the river. Best go during good weather because you will line up along the river. The line had almost 20 people when I was there during opening time. If you are going by car, Himi has free parking around the city center, and there's one less than one minute from TONJINCHI. With the exception of seasonal ramen specials, there is a simple menu of dried sardine broth ramen (the main ramen), and either white soy sauce or black soy sauce ramen. Of course, you can add rice or drinks, but not toppings. And the toppings are brought out on a separate plate. This is because the ramen master does not want to contaminate the taste with the toppings. You have full control over how to change the taste of the ramen with each individual topping.
First off the bat, the soup broth was a deep rich broth of umami. That broth! I can see why the other toppings were brought out separately, as they do change the taste of the broth. The noodles are medium thin, and a good harder type of al dente. The charsiew was perhaps the most normal to my taste. The menma was sweet, the egg was flavorfully marinated, the leek added a good punch midway, and the seaweed changes the soup into an entirely different soup, so save the seaweed for the latter half of your meal. That broth! I am not sure if this is the number one ramen in Toyama, but it is definitely memorable! (My favorites in Toyama are Hajime, Isshin, Tsubomi as well)

貪瞋癡は富山県の一番ランクが高いラーメン屋です。氷見市にあります。メニューはシンプルです。煮干し、白醤油、黒醤油しかありません。初めてなので、煮干しを注文しました。あのスープはすごい!旨みが深い!トッピングが別皿にする意味が分かった。確かに、あのスープをメインすべきです。最後にのりを入れると、またすごい味になります。富山県の一番かどうか分からないが、印象に残るラーメンですね。
富山で一番評価の高いラーメン店は、TONJINCHIです。氷見市にあるTONJINCHIは、川沿いにある小さなラーメン店です。川沿いに並ぶことになるので、天気の良い日に行くのがベストです。私が行ったときは開店時に20人近く並んでいました。車で行く場合は、氷見市の中心部に無料駐車場があり、TONJINCHIから1分もかからないところに駐車場があります。季節限定のラーメンを除いて、煮干しスープのラーメン(メインのラーメン)と白醤油または黒醤油のラーメンというシンプルなメニューです。もちろん、ご飯や飲み物を追加できますが、トッピングは追加できません。そして、トッピングは別の皿で運ばれてきます。これは、ラーメンのマスターがトッピングで味を汚したくないからです。トッピングごとにラーメンの味をどのように変えるかを完全にコントロールできます。
まず、スープは旨味の深い濃厚なスープでした。あのスープ!他のトッピングが別々に出されたのも納得です。トッピングによってスープの味が変わります。麺は中細で、硬めのアルデンテです。チャーシューは私の好みでは一番普通でした。メンマは甘く、卵は味付けがしっかりしていて、ネギは途中でパンチを効かせ、海苔はスープを全く別のスープに変えてくれるので、海苔は食事の後半に取っておきましょう。あのスープ!これが富山で一番のラーメンかどうかはわかりませんが、間違いなく忘れられないラーメンです!(富山で私が好きなのは、はじめ、一心、つぼみもです)
