「しのはら」のお弟子さんおっかけ第1弾。ちょうど1年ほど前に、たまたま1週間ほどしのはらにいらしていた澤田さんとお話しし、ぜひ1度伺いたいと思っており、昨日実現。在阪の方をお誘いして3人で。予約は夫が数か月前に。予約時はもとより、実は昨日伺った時もミシュラン星獲得の件は知りませんでした。失礼しました。
季節や気候をよく考えられた丁寧なお料理を、日本酒好きの女将さんのペアリングで、美味しく美味しく頂きました。
着席と同時に、カウンター向こうに氷が飾られていることに気付きました。その後、氷室のお話しなども交えつつ、梅雨にはいろうとするこの季節を爽やかに、という思いの設えと献立でした。
お料理は全て能勢の湧水を使われていること、基本は素材の味をよりよく引き出すために、また季節ごとの気候にあわせ、様々なお出汁や工程を工夫されていること、こだわりの仕入れでお魚はじめ卸してくださる方々のハートをがっちり掴んでいるであろうご様子、などなど、感動ポイント満載でした。
しのはらさんでの出会いが伺うきっかけでしたが、澤田さん独自のお料理観を堪能。ただ、ご本人も、しのはらさんから受けた影響は一番大きいとおっしゃっていましたし、すっぽん出汁を使うところとか、食事の前に鍋がくるところなど、随所にその骨格は感じられました。こういうつながりもありながら、それぞれの料理人が進化させていく。すごいことですね。
まず、私と夫はいつもどおりビールは飲まず、いきなり日本酒をお願いします。女将さんがお料理が出る前に召し上がってしまう感じですか?(はい!)ということで、微発砲の夏らしいお酒からご提供頂きました。以下、お料理とペアリングのお酒(料理の後に☆印で記載)です。数えると、なんと14種類ものお酒を頂いておりました。

とうもろこしを能勢の湧水で煮詰めて煮詰めて、濃厚な甘味を引き出しています。コクを加えるために少量の豆乳を加えているそうです。他には一切調味料なし。浮かべている広島のジュンサイはスッポン出汁をくぐらせて塩味を加えているそうです。究極です!

〇 お椀 明石のオニオコゼ 天然三つ葉 すだち
清まし仕立てにすだちをひと搾りの爽やかなお椀。オニオコゼではあまり使わない調理法だそうですが、このほうが季節を爽やかにすごすために合う、と澤田さんが思われているとのこと。天然三つ葉はとても大きいそうで、葉の部分だけでもこの大きさ。香りは強いものの硬いわけではなく、力強く爽やかさを添える吸い口でした。

身の厚い立派なトキシラスの見事なしめ具合。脂乗りの違う部分を両方味わえるように工夫されています。らっきょうの醤油漬けがまたよい。

太刀魚、澤田さんのおっしゃるとおり、棒づくりのほうがこの魚の旨味や歯ごたえがしっかり感じられます。まずは煎り酒、わさびなしで頂きました。特製の醤油も素晴らしい。ミンチの太刀魚(多分)と北海道の真昆布でお出汁をとって作られているそうです。
鱧の黄身酢、酸味が強めでとても好み。うっとおしい季節なので少し酢を強めで、とのこと。作り方もご説明頂きましたが、やはり能勢の湧水もポイント。お酢を何をお使いかお聞きすると、富士酢プレミアムとのこと。本日早速購入してしまいました。

ブチハイエナ、面白いお酒です。ラベルの悪魔のようなハイエナの落書きは杜氏によるものだそうです。「責め」を全て混ぜてみたら以外と美味しかったので、広島弁のブチうまい、と混ざりの意味をかけているそうです。業者さんのとこりにある残りを全て買い占める予定だそうです。「中乗さん」の記載があるのですが、お酒の名前だか、酒造店(木曽町所在)の別名だか。

おいしい酒のアテをゆっくり頂きながら、お酒も進みます。
〇 小鮎(長野)の米粉揚げ 笹塩 河内の一寸豆甘煮
鮎の仕入れも澤田さんのこだわりだそうです。そのとき1番よい鮎を仕入れられるようにルートを確保されているようです。笹塩がまた美味しい。これ舐めてお酒が飲めます。一寸豆もていねいにきれいに仕上げられています。

鮎ですから、やはりこのお酒で、という女将のこだわり。

本物のいちご煮を初めて食べました。青森に行ってもこんな立派ないちご煮はなかなか食べられないのではないかと想像されます。鮑が大きい。なのに、このうえなく柔らか。大きな鮑にかぶりつく、のが醍醐味ですよねえ、と澤田さん。

☆ 冷奴クールガイ 無限辛口 純米 60%磨き 天吹酒造(佐賀県)
クールガイはどう考えてもビールかと思ってしまう麒麟の絵。女将さんはキリンビールがお好きだそうで。全体的にラベルからもインスピレーションをもたれるような感じでした。とにかくお酒がお好きそうで、こちらの気持ちもよくわかって頂き、本当に気持ちよく飲ませて頂きました。

・豆腐の赤出汁
筍の煮物が絶品。柔らかい山椒じゃこが最高(硬めも好きですが)。お米、少しやわらかめの炊き方です。土鍋でもちろんツヤツヤ。めずらしくおかわりしてしましました。おいしいご飯のお供がありすぎ。
☆ 鷹来屋 特別純米 夏酒 100%自家栽培米 55%磨き 浜嶋酒造(大分県)
ご飯のお供は、同時にアテにもおいしく、しつこく飲んでしまいました。
〇 三輪素麺 鮑出汁にウニを混ぜ込んだ和製カルボナーラ(と澤田さんが)風
〇 甘味 紫陽花きんとん
〇 あわせるのは「ゴッタス玉露」というボトリングティー
美しいピンクか青がそれぞれに供されます。ピンク色はビーツから、青色はバタフライピーからだそうです。中に見事な緑の餡が。これは枝豆ずんだ。
また機会を作って必ずお伺いしたいものですが、ミシュランの星獲得で、今度はなかなか予約がとれないかも、と思いました。
