福岡市博多区博多駅前。
博多駅前の道路を挟んだオフィスビル地下1階にある『博多 鮨 貴山』を再訪店。
最高に美味しい江戸前鮨は勿論のこと、この鮨屋の堅苦しくない雰囲気と大将の魅力に惹かれている。
カウンター席へ座るやいなや大将が出迎えてくれて時計がまた動き出すかの様に前回の続きが始まる。
空間に溶け込むには時間は要らなかった。
今回の予約は、

先ずはシジミの一番汁で肝臓を労わる。
この優しいもてなしは一献傾ける序章に過ぎない。
前菜で大将が裏から出してきてくれた日本酒へ。
握りは、石鯛、本鮪の背、ヤリイカ。マグロ刺身を挟んで、シマアジ、マダイ、カマス一夜干し、タイラギ貝。
そして後半は、トロタク巻きから鯛の炊き合わせ、ウニいくらカニの小丼、車海老の握り、鮑とアオサの茶碗蒸し。本鮪の赤身、煮穴子の握り。かんぴょう巻き、玉子、なめこ味噌汁、甘味にババロア。
お酒はプレミアム生ビール熟撰。
日本酒は、地酒、特に筑後の酒が多く、福岡の酒で楽しみました。最終的には、芋焼酎『風憚(ふうたん)』をロック。トロッと上品な芋の甘味が最高。
大将の和やかな空間演出のおかげで楽しい時間を過ごせました。
時折、カメラに映り込もうとする悪戯な笑みもあれば、包丁の刃先に向ける鋭い眼差しに凄みを感じ、その振り幅に感服しましたね。
より鮨が旨く感じるのは気のせいだろうか。
巧みな職人技、高いホスピタリティ。
五感を揺さぶられて鮨屋ってこんなに楽しんだな。
