したものを巻く。
・カワハギ 肝醤油その後シャリを入れてリゾット
としてスプーンで食べる。
・メヒカリ 一夜干し あぶり
・甘海老新庄 粗く叩いて、米粉で揚げる
・かつお 山わさび、刻んだネギ
・あん肝 出汁とわさびを乗せて
・太刀魚 塩焼き、刻んだネギ
・メヌキ タマネギのタレ、子ネギ
・茶碗蒸し タラの白子を裏ごしした茶碗蒸しの
上に白子が乗っているまさに白子、
白子の茶碗蒸しです。
・ブリ生ハム ブリをこんな美味しい食べ方がある
のに驚嘆。

・さより 軽く昆布締め
・まぐろ 大間産220kg 溶けた
・ボタンエビ 大きいのにもちろん甘く大味で
はない。
・ホタテ 手でちぎったもので握るので、
食感を非常に楽しめた。
・北寄貝 炙ったものを塩で
・イワシ 根室産。包丁が繊細。
・キンキ 炙った
・蝦夷バフンウニ 小さいウニのかけらを幾重にも
乗せ、甘みに嫌味が無い。
・毛蟹
・アジ
・しめ鯖 生のように心地よい
・スミイカ アオリイカのように歯応えは
優しい
・イクラ これくらい量で食べるイクラが
いい。
・コハダ 形、色目、締め具合、最高。
・金目鯛 香ばしく柔らかい
あと、締めの蕎麦を食べることが出来なくて残念。
