金沢にあるレジェンドのお店です。ランチの1回転目でしたので大将にお会いできるだろうとは思っておりましたが、御高齢ということもあり実際にお店に入るまでドキドキわくわくでした。
そして緊張しながらお店に入ってカウンターに座ると、さっそく大将がニコニコとお出迎えくださいまして、さっきまでの緊張がなんだったのかと思うくらい一瞬でリラックス。
その後もずっと優しい表情で気さくに話しかけてくださったり、笑わせてくださったりと、鮨の神様というよりはむしろ温かみのある仏様といった雰囲気。お寿司を握る姿を見ているだけで素晴らしい勉強になるというか、自分の生き方にも気合が入るような、最高のひと時を過ごさせていただきました。
料理に関してはあまり書く必要もないと思いますが、想像と期待をだいぶ越えてくる美味しさでした。東京の寿司と違い、分厚く大迫力の絶品のネタに、シャリは小ぶりで魚の旨さを最大限に引き立てていて、味付けも珍しく面白いものがあったりと、いつまでも永遠に食べ続けていたいと思うほどだった。ほんとにどれも感動的で挙げればきりがないどだけれど、後半の穴子や鰻の巻き寿司までとても印象的だった。
帰り道にふとアメリカの古い歌を思い出した。こんな風に僕も頑張っていこうと。
