今年の初訪問。
訪問したのは1月末。
家人と代々木上原の駅から店までの道をたわいもない話をしながら歩む。
店に着きドアを開ければ、何時もの様に佐藤夫人の素敵な笑顔に迎えられる。
当たり前の様にカウンターの定席に2人で腰を降ろし、笑顔の厨房の皆さんに挨拶をする。
佐藤シェフが何時もの様に、
「お任せでいいですか?」
と訊く。黙って頷く私。
行きつけの店のルーティンワーク。
いいものだ。
何時もはシャンパーニュで始めるが、
何故かこの日はロワールのロゼのスパークリングにする。
ロゼを飲みながら付け出しを楽しむ。
アミューズは何時も通りスプーンに載ったブータンノワール。
しっとりとした舌ざわりに血の旨味が追いかけ相変わらず美味い。
五十嵐安雄シェフ門下生の定番。
勿論五十嵐シェフの店ル・マノアール・ダスティンでも出てくる。
前菜1つ目は日光サーモンの団子と金美人参のムース&コンソメのジュレ 雲丹添え。
日光のサーモン?と思えば鱒だそう。
ヤシオマスを進化させた鱒で、大滝日光サーモンとして商標登録しているそうだ。
料理は鱒のムースを鱒で包んだものだ。
ふわふわしっとりのムースも上出来だが、
廻りを包んでいる鱒の脂が適度なのりでことのほか旨い。時季がいいのだろう。
鱒の脂は鮭に比べると控え目だがより上品だ。
まるで助演女優賞を貰った女優の様で抱きしめたくなる。
思わず、もう一つちょうだいな、と言う言葉を飲み込む。
この日の一番かもしれないなと直感的に思う。
金美人参のムースとコンソメのジュレ雲丹添えも五十嵐安雄シェフのスペシャリテ。
これは食べ慣れているが、すこぶる美味。
これを食べに五十嵐御大か門下生の店に是非行って味わって欲しい。
佐藤シェフのバージョンは人参に金美人参を使っている。
金美人参はレモンイエローの人参で苦味がなくて甘味が強い。
ムースの色も黄みがかっていて、上の半透明な赤橙色のコンソメのジュレとのアンサンブルが目を魅了する。
何時も思うのだが、佐藤シェフの料理、
特にムースやプリンは宝石を散りばめた様に綺麗で、女性の心を鷲掴みにすると思う。
滑らかなムースはしっとりとして、人参の甘みを仄かに感じさせる。
丸ろやかな味が舌に優しく、コンソメの旨味は極上の舌ざわりに乗り、脳髄が悶える。
そこに雲丹のねっとりとした舌ざわりと旨味。
最近は慣れで感激が減じている感が否めないが、最初に食べた時の感激は今も忘れない。
続く冷菜はカワハギと甘海老 林檎のタルタル 肝のムースリーヌと軽くヴィネガーで〆た鰆のカルパッチョ&ビーツとフェタチーズのクラフティだ。
カワハギと甘海老のタルタルは旨味と甘みのハーモニー。その調和が程よい。
泡立てたクリームと併せてある肝のソースが旨味満点。カワハギの肝好きには堪らない。
肝の濃厚な旨さにクリームのこくの旨味のダブル攻め。その上ソースの滑らかさ。
当にフレンチならでは。
誰が食べても喜ぶだろう。
どうしてカワハギと甘海老をタルタルで併せようと考えるのか。
そのアイデアはどこから出てくるのか。日々産みの苦しみか…
鰆は生で食べると柔らかく食感が悪いが、酢で〆たことにより食感が向上している。
鰆は火を入れた方が絶対に旨いと確信しているが、なるほどこれならば生でも悪くない。
ビーツとフェタチーズのクラフティは、ビーツの赤い色が目に心に深く滲み入る。
これは一目見た綺麗さというより、眺めているとますます魅入られる懐の深い色だ。
何時も思うが佐藤さんの料理は色使いが私の感性に合う。
フェタチーズはギリシャの代表的なチーズで山羊の乳から作られる。
チーズの旨味が出ているが癖は殆どなく万人に食べやすい。
続く温菜はオマール海老のムースと豚足のテリーヌ タイム風味のトマトソース。
佐藤シェフは何時も私の好きな素材を使った料理を入れてくれる。
豚足は私の大好物。これに贅沢にもオマール海老を併せている。
ちょっと、ちょっと、両方使うのはもったいないよ、と言いたくなる。
その後には、あはは、という嬉しい言葉が出そうになる。
付け合わせは京都の聖護院蕪とシェフの実家産の芽キャベツ。
これをトマトのソースで和えている。
そしてスペイン産雛鳥と海の幸のテリーヌ。
ミンチした雛鳥に、足赤海老、帆立、鶏手羽を入れ、雛鳥の腿肉でサンドしてあるそうだ。
クランベリー入りのサワークリームソースが添えてある。
ガルニには紅辛大根と菊の花のマリネである。
淡泊な雛鳥は脂が強くなくサッパリ感があるが、旨味のある海老や帆立を加え料理としてバランスを取っている。
この辺の計算はきちんと出来ていて、外れがない。これはモレ・サン・ドニと殊の外あう。
次は仔ウサギと牡蠣の洋風茶碗蒸し フォアグラ クリュ添えと黒鯛のポワレ 帆立ソース
奥様によると、佐藤シェフは茶碗蒸しが大好きなのだそうだ。
洋風茶碗蒸しと言うが、フレンチで言えばロワイヤルと言う方がしっくりくるだろう。
素材は私の好きな兎。それも仔兎。
仔ウサギは淡泊なので、そこに旨味の強い季節の牡蠣を併せている。
その上にフォアグラとくれば旨さの二重奏。
きめ細やかで繊細な茶碗蒸しは、スプーンですくうと崩れるはかなさ。
口に運べば唇を優しく撫で、旨味が舌にじんわりと滲みる。
穏やかな温かさが舌から喉、そして胃の腑へと落ちて行く。あ〜、冬の幸せ。
黒鯛のポワレは、この日の唯一?と思った皿。
魚の皮目が焦げているのだ。
見た瞬間にがっかりした。
焦げると苦味が出るから私は嫌いなのだ。
もう10回位来ているがこんなことは初めてだ。
皮目の火入れは簡単ではないが、佐藤シェフとあろうものが。
プロは火入れが全てとは言わないが…
ヴィアンドは十勝の自然飼育和牛のフィレステーキ 焦しバターソース。
このビーフは我々の好みの赤身。
柔らかく、その上ビーフ独特の味が濃く、すこぶる旨い。
私は普段自分からビーフは食べない。
ジビエでない肉ならば仔羊が定番。
それに兎、鴨くらいだ。
が、これは久々に美味いビーフだと思った。
まず火入れが完璧。
この男をたらしこみ魅惑するような色。
肉はしっとりと、咀嚼すればするほど赤身の旨味を十分に感じさせる。
尋ねるのを忘れたがねかせ方もいいのだろう。
それに素材が良いのでシンプルな焦しバターソースがあう。
この皿には当然ながらグラスで赤を併せた。
黒鯛の皮目の火入れは外したが、ここで完璧な火入れを披露してくれた。

私はパスで家人がいつもの様に嬉しそうに食べていた。どうせ美味しいに決まっているので、味については訊かなかった(笑)。

今回も佐藤シェフは新しいものを含め美味しい料理でもてなしてくれた。
毎回新しい料理を考えるのも大変だろう。
有難いことだ。
感謝を前提に敢えて一言。
この店は街場のフレンチで、グランメゾンの様に料理人が多くいるわけではない。
殆どの仕事を佐藤シェフがやらなければならないのは分かる。
だが、それで何処まで出来るかの勝負だ。
私がよく行くアラジンの川崎シェフの魚料理で、今回の様な火入れにはお目にかかったことがない。
佐藤シェフには川崎シェフや五十嵐シェフの域にまで達して貰いたい。
だから一皿一皿に細心の注意を払って欲しい。
料理は時代の鏡、料理人は時代を生きる人。
誰の言葉か忘れたが、佐藤シェフの料理には御大達にない時代性を感じる。
しかし、基本はいつの時代も同じはずだ。
才能のある人は多い厳しい世界だ。
精進してほしいと思う。
