小樽の寿司屋通りの外れ、港に向かって北上した奥側に位置する、握り寿司店です。
こだわり抜かれた寿司ネタ、調度品、洗練された演出は見事です。
葉蘭(読み方:バラン、笹の葉などのカウンター上の握り置き)、醤油指し、小皿 … には、小樽名物のガラス食器を使用、老舗と異なる先進の感性が光っています。
ランチの「おまかせ握り」を戴きました。

小樽・色内町の田中酒造が、お店の為に開発した、日本酒を冷やで戴きます。

おまかせコースは以下の通り。
■ヒラメ 昆布ジメ
プリッとした身に、昆布の燻が漂い!
酢飯は柔らかめの味付けで、フワッと口中に拡がります
■天然の中トロ
養殖程、脂の刺しが無く、旨味が濃い
■ホタテ
これも軽めの煮切りで、糖度が高く、旨味たっぷりの貝柱
■タラバガニ
大振り過ぎると身が硬くなりガチなタラバですが、これは上物
■苫小牧のホッキ貝
見た目は不恰好ですが甘味は抜群の道南の味覚です
■ソイ
北海道らしい一品。冬の脂の乗りは格別です。(あれっ、写真取り忘れた)
■牡丹エビ、卵醤油漬け載せ
家人曰く、本日最高の一品!卵の醤油漬けと云う繊細な手間が活きています。

良質の馬糞
■イクラ
卵の皮が柔らかで、上質な仕上がり。
■あおさ汁
ほんのり海老出汁が美味い!
※ 海老出汁は、本旅行中、三度も出くわし、ブームを痛感!
■追加で一貫 白子、軍艦巻き
硝子の容器に入った、真鱈の白子が、余りに美味しそうで、遂々、注文。『イデミ・スギノ』のケーキの様にクリーミィ!
洗練されたスタイルは、小樽の町では群を抜き、ミシュラン☆☆も納得の名店。
次回は夜、お寿司以外も摘まみに来たいものです。
