海鮮至上主義者の私には、この店以上に志向に合うレストランが有り得るのか、想像することが出来ません。
最高級の海産物を贅沢に使い、機を衒わず、素朴で、丁寧に仕上げられた会席料理の数々、遠路遥々、赴く価値のある、至高の名店です。
2ヶ月前に予約、土用 丑の日の夜、東北の旅の道中、立ち寄りました。
三陸・日本海を見晴らす高台にあるのですが、生憎の雨で、窓からの眺望は拝めませんでした。
しかし、港祭り明け、平日・貸切状態でしたので、女将との会話を堪能させて戴きました。
気立ての良い美人女将と、無口な料理人の旦那のコンビは完璧。松島で10年商売された後、17年前に、塩釜に移って来られたのだそうです。
さて、本題。まず、先付け三品。
○金目鯛の笹巻き寿司
○ホヤの一口握り(二巻)
○蛤、烏賊、めばちマグロ赤身 酢味噌和え
微妙な塩加減と鮮度の良いネタで、美味さが全てで際立ちます。下処理されたホヤは臭みが無く、煮切りと合います。
○鰆の塩焼き、おから添え
焼き物は、脂がのった鰆(さわら)。まるて鯖の様にふっくら、おからは箸休めと云うより、主役に負けない存在感で、いい味出してます。
○胡麻豆腐、粟餅、冬瓜の椀物
吸い物も上品過ぎず。
本日のメーンイベントと呼びたい、
○お造り、マコガレイ、牡丹海老、めばちマグロ中トロ、北海道の毛ガニ、塩釜・七ヶ浜産の紫ウニ
毛がにの足の身の剥き方が完璧!なぜ、こんな綺麗に剥ける!更に、味は感動的!
そして、塩釜湾で取れた雲丹、中身がぎっしり詰まって、濃厚クリィーミー。箸で持ち上がる身の締まりと、口の中で溶けるきめ細かさ、二律背反の凄うま。
○進め鉢
梅ジュンサイ、モロっこいんげん(ささぎ)、いかめし、昆布巻き、炊き合わせ
○毛ガニ甲羅焼き
たっぷりの毛がにの身に、椎茸、玉葱がアクセント。箸休めに添えられていたのが、なんと店の名物、牡蠣のオイル漬け。燻製した牡蠣のオイル漬け、白ワインが欲しくなります。
○青梅、葛切り、そら豆
○鰻の蒲焼き、米茄子添えと、味噌汁
〆のご飯は、内心期待していた、鰻の蒲焼きでした。もちろん、土用・丑の日ならではのサービス!
お椀には、地元の布海苔とお麩、そして、お造りの牡丹海老の鬼殻入り。香ばしい磯の香りの味噌汁です。
○抹茶の粟粉餅
甘味には粟持ち。豆乳、抹茶でふんわりと、小豆あんを包みました。
ドリンクには、生ビール一杯と、旅茂多物(おもたか)、金澤屋を、それぞれ冷やで一合。お店のお薦め、金澤屋は甘く芳醇な香りだが、キリッと爽やか、海鮮との相性抜群!
お任せ一万円コースを二人で戴き、ドリンク合わせて、2.5万円超はお得過ぎ!地方ならではの特産を活かした贅の極みに加え、築地の割烹の様な洗練された料理の数々、そして美酒…、心ゆくまで堪能しました。
