秋田市を訪問。市役所そばに在る、37年続く名居酒屋を堪能して参りました。
土曜の夜の訪問で、予約は2ヶ月前。
三人で二人前のコースを頂き、アラカルトを追加してバリエーションを愉しみました。
■お通し六品=①蛸の梅肉和え ②比内鶏肉、もつ煮込み ③焼き茄子のモロヘイヤソース ④鯵の南蛮漬け ⑤枝豆ピリ辛醤油漬け ⑥燻りがっこ白和え
まず、山海が並ぶ、素敵なお通しに、驚かされます。少量で沢山戴けるのは、旅人にとって、嬉しい限り。[燻りがっこ]がめっちゃ美味しかった!白和えにチーズでも入ってるのかしらん?
コースは以下の通り。
■お造り=真鯛、平目、秋刀魚、真イカ
■揚げ物=小海老とユリ根の天麩羅
■蒸し物=とろとろ茶碗蒸し、カニ入り
■煮物=牛すじ煮込み
■揚げ物=豆腐まんじゅう
■煮物=茸、鶏、秋の根菜の煮込み
■盛りそば、辛味大根の汁付き
魚介の脂のノリ、鮮度もさることながら、特有の調理が光る、
あん掛けで戴く・茶碗蒸し、
品の良い揚げ出し風・豆腐まんじゅう、
はマストアイテム。

出される器は、ご主人が長年作り続けている物だそうです。釉薬の風合いも良く、料理だけなく、プロ顔負けの腕前です。ご主人、ご馳走様でした。
