一見よくある小料理屋なのですが、凄腕シェフによる極上の料理は、京都の一流料亭となんら遜色ありません。
マスターのワンオペ。カウンター5席のみ、肩寄せ合いながら一献傾ける大人の料理屋です。
何度か予約に挑戦して失敗が続き、平日の夜にやっと訪問です。
お隣りのお客さん用に、鱧の骨切りが始まると、シャキッシャキッと素敵な音。松茸と鱧と土瓶蒸しを作っています。

ご主人は「たん熊」出身との事。あぁ、やっぱり一流ってのは違いますね。
お造り、焼き物、煮物… オーソドックスな和食が選択してのアラカルトで頂きましたが、ご常連さんはご予算を決め、コースでお願いするのだそうです。
