まずこちらは食べログのホームページから飲食店予約のオンライン予約サービスのTableCheckから予約をします。
そうすると氏名、電話番号、メルアド、住所を記入し送信するとTableCheckからメルアドに返信がありそれをクリックすると日にちと時間と人数の項目がありますのでそれをチェックします。
その後カードの登録が行われ支払いはコースは先払いで当日のドリンク代も自動でカード払いになります。
因みに当店は予約困難店ですが今の時期は取り易く私は約3週間前に16:00に予約を取りました。
時間に関してですが食べログの情報とは違ってコロナ禍で12:00、14:00、16:00、18:00の四部制となっていて12:00、14:00はお弟子さんが握り16:00、18:00は大将の中治氏が握りますので是非とも16:00、18:00で訪問して下さい。
コースは一種類で税・サ込みで55,000円になります。お高いですねw
それと前日に確認メールがTableCheckから来ますのでチェックを入れて返信して下さい。
以下、食べた物です。
ご飯は開始時間に合わせて羽釜で備長炭で炊いて行きます。
砂糖不使用で赤酢が主ですが米酢も使っているかな?と言ったシャリで目の前で合わせてくれます。
握りの味付けですが江戸前方式で醤油はお客さんのカウンターにはなく大将が煮切り、塩、カボス、そのままと言った具合で仕事をして行きます。
※最後の方に出る鮪大トロ漬け藁炙りは大トロを軽く下茹でして漬けにしていました。

値段は張りますが大将の喋りと具材や調理のショウアップはまるで別空間です。
やはり関心したのはご飯を羽釜で備長炭で炊く所と焼きは備長炭か藁と最高峰の料理法と技術と具材です。
経験として行かれるのも面白いと思います。
