東京シリーズ・・・続き・・・
しながわ翁で蕎麦を食べた後、無理やり入れた仕事は夕方に終了。ホテルにチェックイン後、お寿司に向かった。
それがこのお店。2016.07現在、寿司部門で食べログ上「日本で1番人気」にランクされる。それだけに予約が難しく、予約のできないお寿司屋さんとして知られている。
予約時刻はPM7:00。遅れないようにホテルを出発し店頭に着いたのが10分ほど前。既に半分ほどは入店されていて私は3番目。すぐに全員集合、挨拶を済ませコースがスタートした。
この日は個室で、橋場俊治さんが担当。まだお若い方では有るが、きりっとしたハンサムで動きがきびきびし、作られる料理に期待を持たされる。
私は飲めないので冷たいお茶を注文、以下の物が出された。
まずは料理から。
「星鰈と肝」
「初鰹の漬け」
「千葉県大原の鮑」
「神奈川県佐島の蛸」
「星鰈縁側の炙り」
「富山県氷見の白エビ」
「のどぐろの焼き物」
「水茄子」
握りに代わって以下の物。
「鳥取県境港の鮪で漬け、1週間熟成した物」
「同じく中トロ」
「大トロ」
「千葉県銚子の金目鯛」
「いさきの漬け」
「こはだ」
「鹿児島県出水のスミイカ」
「鹿児島県出水の根つき鯵」
「車海老」
「煮ハマグリ」

で、コースは終了。この間約2時間半ほど。
食べ乍ら、何が人気の理由なのか考えていたが気付いた事が何点かあった。
まず、ネタが違う。上質なのは勿論、半端ではない技術で熟成させたり手を加えたりしてある。
其れと、料理を作る姿勢。常に真剣で動作が流れる様で無駄が無い。踊るように握る所作に感服した。
正直、この味でこの金額なら文句の出ようはずがない。人気No1は理解できる。
只一つ困ったことが出来た。此れからは此処が基準でお寿司を考えてしまう事。
