どんだけサービスしたら気が済むのか〜の手打ち蕎麦屋のシリーズ。
蕎麦のクオリティ〜はもっと感動します。
後で知ったのですが、こちら手打ちそば政坊さん。
全国放送されていたお店らしい。
バスを降りて飲食店にありつけるまではなんだらかんだらみたいな番組(笑)
(サンドウィッチマンが2時間半歩いて辿り着いたお店)
・香りが一番立つ製粉方法とは・・・
・剥き実を石臼で挽いた手打ち蕎麦。
実はこれが一番風味が立つ蕎麦となります。(私の経験上)
挽きぐるみの蕎麦が一番香りが立つとある時期までは思っていましたが・・・
ある蕎麦屋に伺ってからそれは違うという事に気が付きました。
ただこれは蕎麦職人からすると違うとの見解も頂いております。
何でも季節によるらしいが、低速を選択出来るロール挽きの方が得策となる場合があるとの事。
(確かにその蕎麦は強烈に美味い新蕎麦だったりしました)
本題に。
冬季は通行止めとなる県境に近い場所。
雪の降り具合は結構凄くて、スキー場並みの迫力となる降雪量・・・
開店までは30分ありましたが降雪の影響で車内は曇まくり(汗)
元は民宿みたいな感じの建物。
結構新しい建物で雰囲気は良好というよりは抜群の雰囲気。
温かい店内は本当に天国となります(笑)
◇もりそば(長皿、小鉢付きの破格のミニ蕎麦コース)¥900多分税込みだった様な印象
最初に蕎麦つゆとか小鉢が提供されます。
その後、5分くらいすると天婦羅とか焼おにぎり、そして田楽とか多種多様な内容となる長皿の登場。
その後にメインの手打ち蕎麦が運ばれてきます。
蕎麦は新蕎麦、これは鶯色で判断できます。
蕎麦は名店の証となる、剥き実を石臼で挽いたヤツ。
(私が見て勝手に判断した内容となります)
蕎麦に詳しい方ならすぐに分かる超極上品。(ホシよりも甘皮)
とにかく蕎麦の香りが抜群(^^v
そして甘い♪
(使っている水が甘いのではなく蕎麦が甘い)
汁に漬けるのが本当に勿体ない手打ちそばとなります。
汁は上等な濃い目のかえし♪
しかし、mumumumu〜
出汁はどう見ても本節系でしょうか(^^:
それでもそこいらの名店以上の出来なのは明白。
米沢の蕎麦街道行き止まりのお店は味わい、そしてコスパとそれに〆に相応しいお店となります。
