美味しい天ぷらをリピート、今回は料理人の友人とこちらへ。
昨年行って感動した天ぷら店、麻布の本店はミシュラン獲得「天冨良 麻布よこ田 銀座別邸」。
有楽町駅近く東急プラザの裏手、飲食店が入るビルの地下1階、隠れ家的に佇んでいます。
「天冨良【極】会席(18,000円)」
全26品の贅沢なコース。
季節によって内容が変わるのも、日本料理の良いトコロ。
新鮮な食材を堪能出来る、こちらの最高のコースです。
”最強の天むす”という、海老天・キャビア・イクラ・カラスミの海苔巻きが最高!
前回も食べて感動した巻き物です。
でも、それ以上に凄かったのは「磯辺揚げと生うに」。
海の物独特の臭みは皆無、しっかり雲丹風味が口の中一杯に広がる逸品。
食べてる時間が終わって欲しくないような、一番上の「極」コースのみの贅沢です。
今回は白身魚が、真鯛、オコゼ、甘鯛と3種。
淡泊ながらしっかし身を味わえる真鯛、パリパリの皮が独特の甘鯛、ホロっとした食感のオコゼ。
それぞれの美味しさを感じられ、非常に良い内容でした。
野菜の美味しさも際立っていますが、新鮮な魚介が美味しい!
焼き、煮込み、揚げ物も美味しく仕上げる、日本食の真骨頂ここにあり、という印象。
かき揚げ丼と赤出汁で料理はフィニッシュ。
本格的な抹茶と焼きプリン&餡子添えで、最後まで和の心を満喫。
ホスピタリティも素晴らしい、銀座の天ぷら。
