三ツ星フレンチを食べまくっている友人と、たまには美味しい鮨でもどうかな?
という事で、奥渋の隠れ家的な場所にある「あじゅう田」に行ってきました。
「おまかせコース」にドリンクはアラカルト。
今回は二人とも鮨に集中!という事でノンアル、アンティポディーズのスパークリングで乾杯です。
鮨の前に、前菜が出てきますが・・・
”前祭”みたいな豪華な逸品の数々!
食感抜群の「アワビ」、海苔の絶妙のマッチングの「鰹」、味わったことのないクリスピー感の「鰻」。
絶品過ぎる絢爛豪華な内容です。
更に「すっぽんの出汁」、そして美味しすぎる「あん肝」
鮨が出てないのに、既にハイライトか!?
それくらい美味しい一品料理でした。
「もずく酢」の箸休めを挟み、これから鮨タイム。
「春子」「鰯」「コハダ」とヒカリモノ。
この中では鰯の美味しさが際立っていましたが、後味もサッパリで次に繋いでくれます。
鮪尽くしの時間。
「大トロ」「赤身」「中トロ」が畳みかけます。
それぞれの美味しさの違いを感じられる流れですね。
二段重ね?いやそれ以上の高さの「雲丹の軍艦」。
続く「海老」も目の前で捌くライヴ感もあり、臨場感たっぷりに頂けます。
本来ならここで穴子という事ですが、現在は品薄&季節ではない、という事で「蛤」。
その蛤は、即日調理のコダワリ調理!
食感の残し方が絶妙、これは食べておくべき味わいでした。
「お椀」「玉子」で〆。
おしぼりの交換、下げ膳など極め細やかなサービス。
心地よさの追求も、このお店の真骨頂と言えるでしょう。
奥渋のアジト?
本格的な鮨を堪能出来る「あじゅう田」の立地は、まさにそんな感じ。
ビルの構造のせいで、メインの入口がエレベーター。
降りるとスタッフがお出迎え、このギャップすら素晴らしい体験。
店主の阿重田氏の所作や、料理に対する詳細な説明に感銘を受けます。
渋谷で美味しい鮨ならココで間違いないでしょう。
舌の肥えた鮨マニアでも納得の味だと思います。
店を出てからの余韻も素晴らしい夜でした。
