みつごとうさん様の貸切会にお誘い頂き、5年ぶりの再訪が叶いました。

クスモトさんは、月毎にテーマが変動する創作性の高いお店。
いまや大阪ではトップクラスの評価を誇っております。
当該月のテーマは
「和食とイタリアンのフュージョン」
旬の素材をふんだんに使ったお料理は、和食とも、イタリアンとも、洋食とも思える内容。
盛り付けも演出も、まさに唯一無二。「クスモト料理」とでも呼びましょうか。
太刀魚のカダイフに合わせるのは、唐辛子と木の芽を使ったサルサヴェルデソースのシャーベット。
雲丹とキャビアの使った大人のポテサラ、更にはスッポン出汁で使った大人のパスタまで。
想像をはるかに超える前衛的なお料理たちが続きます。最後まで興奮と感動が持続しました。
それに合わせますのは、奥様が提供されます醸造酒たち(ビール、ワイン、日本酒)。
お肉の時は赤のピノノワールを頂きましたが、それ以外は日本酒をお願いしました。
頂いたお酒は以下の通り。
●大観 (雄町 純米吟醸)No14
●香住鶴 (山廃純米)
●鶴齢 (純米吟醸 愛山)
●篠峯吟和(純米大吟醸 1年熟成)
●上喜元 (雄町 純米吟醸)
●Pino Noir(新潟県)ワイン
熟成酒から醇酒を中心としたラインナップ。1年以上寝かした長期熟成酒も含まれていました。
保存状態が極めて良好。風味の開き具合、丸み具合が絶妙のお酒が最適温度で供されます。
いずれのお酒も丁寧に扱われていることが舌を通して伝わってきます。
お酒を醸すのは蔵人、その味を大切に維持していくのは飲食店や酒屋の責任だと思います。
そういう意味で日本酒好きとして大変好感が持てましたし、勉強になりました(礼)
毎月テーマが変わるのは、クスモトさんの魅力の1つ。
季節を変えてお伺いすれば、素材と共に演出もずいぶん変化しそうです。
また、サーブされる奥様の笑顔も魅力の1つ。
お料理、お酒、雰囲気、サービスのトータルバランスが最高水準の1軒です。
