麻辣連盟の“涙を流し口から火をふく、四川料理の旅”という本の、表紙写真にも使われた魚料理があるお店。
成都中心部からタクシーで20分くらいかかります。
こちらも庶民的な感じ、インテリアは中国昔風に作ってあります。
11時半ごろ行ったときはガラガラでしたが、あっという間に満席になりました。
青花椒魚:ここの看板料理です。水煮魚とか、沸騰魚とかいろいろ名前が付きます。下茹でした野菜、魚の切り身、そして大量の花椒と唐辛子の上から、水ではなく、沸騰した油を注ぐ料理です。魚はナマズのような淡水魚で、臭みもなく、とろとろ、つるつるして絶品の美味さ!
干鍋魚排:こちらも看板メニュー。骨付き魚とジャガイモのから揚げにクミンなどの大量のスパイスを混ぜています。こちらは香ばしくてお酒が進みます。
豇豆茄子:茄子とササゲの炒め物。魚香が効いてこれも美味しい。
红椒美蛙:カエルの身が大きい。辛くて痺れてつるつるでぷりっぷりで箸が止まりません。美味い!
醤萝卜:大根の醤油漬け。ご飯にぴったり。
いろいろなところで水煮魚を食べましたが、ここのが今までで一番おいしかった。
思わず翌日もリピしてしまいました。
