ほんのり牡蠣の香りのするとろりとした濃厚な豆乳スープ
【白センマイ」
なんとこの量で牛12頭分という希少部位。コリプル食感で旨み凝縮。セロリの葉の風味も爽やか。
【ズッキーニ】
ハツの脂で焼いたズッキーニ。焼き脂の旨みとズッキーニの風味が高相性。ビールのつまみにもってこい。
【焼きタン】
とんでもないボリュームのタン。タン元からタン下までをドドンと4切れ。絶妙な火入れで柔らかジューシー。脂の強いタン下は針生姜と共に。
【ホルモンのマッシュルーム出汁しゃぶ】
センボン、ツラミ、シビレ、シマチョウ、豚のウデとバラをマッシュルーム出汁でいただくしゃぶしゃぶ。
スタッフさんが程よい火入れ具合で提供してくれるのでどれも柔らか。
【ツラミ肉寿司】
凍らせたツラミを削り節の様に薄くスライス。味付けは卵黄、チーズ、バルサミコ酢、オリーブオイルなどなどから選んでかけてもらいます。そのままでも美味ですが、卵黄、チーズ、オリーブオイルの組み合わせはカルボナーラチックで美味でした。
【トンテキ】
厚切りの豚ロースとバラ肉を使ったトンテキとポテトサラダ。こちらも絶妙な火入れでほんのりピンクの断面。メチャウマですね。
【マッシュルーム出汁の玉子丼】
ホルモンをしゃぶしゃぶしたマッシュルーム出汁を使った玉子丼。もちろんマッシュルームもたっぷり入って旨みもぎゅっと凝縮されてます。
