ランチコースの約2時間半。北イタリアの郷土料理への愛、日本全国の生産者と日本の食文化へのリスペクトを感じる最高の美食体験でした。
『お昼のおまかせ料理コース~メイン料理仔羊の藁包ロースト〜』と『ノンアルコールペアリング』を注文。
お店のスペシャリテ『仔羊の藁包ロースト』のホゲットは北海道帯広市、サラダに使用した『LiSAトマト』は高知県高知市、天豆は鹿児島県指宿市産。それぞれの生産者のお名前と、その食材の何が素晴らしいかを柔らかい口調で丁寧に説明されるシェフの堀川さん。
火入れ具合が至高の『仔羊の藁包ロースト』は、藁の香りとホゲットの脂の旨味・甘みが格別。
糖度の高いLiSAトマトを中心としたサラダは、酸味と香りの強い苺のソースが全ての食材をまとめて昇華。ナニ、コレ?
天豆のパスタ(オレキエッテ)は天豆のサヤからスープをとり、天豆の青さと甘みをシンプルに抽出。そこにチーズの香りと黒胡椒のキレが合わさる様は、少年が一気に大人になったような驚きと力強さを感じました。
シェフの語り口とお人柄、接客・サーブ。全てにおいて満足で、すっかり虜になりましたね♪
食後の感想は「20代のうちに訪れたかった」。
