名古屋市に構える和食の百名店。予約方法は電話のみ。2ヶ月先までの予約を概ね月初に受け付けるそうです。そんな狭き門を幸運にも友人が開いてくれたため来店。
『冬季限定活蟹コース(27,500円~)』
蟹は山形県産の『庄内北前ガニ(ズワイガニ)』を使用。6項目ある厳しい基準を満たしたブランド蟹です。
まずは『1. 蟹と松茸と半熟イクラの玉寄せ』からスタート。何度もこちらを訪れている友人曰く「たぶんスペシャリテ」。
松茸と蟹の香りのコラボ。透き通った美しい出汁。そして粒の大きな半熟イクラのねっとり濃厚な舌触りと確かな塩味。店主に確認はしておりませんが、もうこれがスペシャリテで良いですw
『2. 香箱蟹とウニの蒸し寿司』
蟹とウニの風味を繋ぎ合わせたのは意外や意外、海苔。蟹とウニの"甘み"が海苔の塩味で引き出されたような逸品でした。
その後、八寸、お造りと続き『5. 蟹刺しの蟹味噌しゃぶしゃぶ』で一気に衝撃度はピークに!
コースのスタート時に氷水につけ華開いた蟹刺しを、蟹のほぐし身の入った明らかに濃厚な蟹味噌にくぐらせます。
一番やってはいけない、破壊力抜群の料理w
刺身の鮮度を感じる火入れ具合に脱帽でした。
頬張った時に口の中を駆け抜けていくような蟹の旨味と甘み。蟹味噌の風味と塩味。一粒一粒が弾けるような身の食感。
もうここでゲームセットで良いのですが、この後も怒涛の衝撃が続いていきます。
特に3種類のお椀。そして〆のラーメン。
超ド級のこれらは是非味わって頂きたいです!
蟹というスターと対等に渡り合う逸材達を3つに分け、最高のコラボレーションをしたお椀。
蟹出汁、蟹味噌、蟹の身、きしめんのような手打ち麺。本物の蟹ラーメンは、これでした…。
ちなみに、蟹のコース料理は3月中旬まで提供予定とのことです。
