てっさの厚みが通常の倍はあり、歯応えも優しい甘みも以前食べたふぐとは別物の世界観がある。
煮凝りもプリっとした食感と濃厚な味わいが良い。
特に4月産卵前の旬を迎えた白子は堪らなく美味しかった。優しい甘みに、ネットリとした舌触りと旨味が堪らない。
しかも、白子酒は人生で一番美味しいと思った酒。
旬の天然とらふぐ白子と、厳選した熱燗を合わせて頂く白子酒はなんとも贅沢な一杯。
てっさ焼も、ポン酢と紅葉おろしと葱を合わせて、熱々のジンギスカン鍋で焼くと、日本人には堪らない醤油の焦げた匂いが立ち込めて、風味も食感も別格の味に!
川越のだんごが焼けたあの醤油の香ばしさが最高!
生鮪は赤身、赤身炙り、中落ち、大トロが味が濃く、臭みの全く無い鮪らしい甘みが素晴らしい。
ふぐちりは羅臼昆布が柔らかくなった頃に火を入れて炊き上げます。
大振りのふぐは火をいれると弾力のある身がこれまた昆布のUMAMIを纏って美味。
締めの雑炊も、ずっと食べ続けたい仕上がりに。
いやあ、こんなに素晴らしいふぐ料理屋さんが練馬にあったなんて、知りませんでしたねー。
