「和食みよし」は私のお気に入り店の1つ。
三好さんは、以前からの知り合いで、数年前、店の開店をお祝いして「お付き合いでw」伺ったのがきっかけです。
正直・・・期待してなかったのですが(失礼w)・・・彼の料理を頂いて、彼の料理人としてのレベルの高さに驚きました。
品のある店構え。木の香りのする清熱な店内。計算された丁寧な料理。
お品書きに日付を入れていて、毎日書き直している点にも こだわりを感じますね( ´ ▽ ` )
刺身の盛り合わせは、目で見て綺麗なだけではありません。意味のある包丁の入れ方で、魚の美味しさを引き出してます。
ちゃんと考えてるな~。また、彼の鱧の骨切りは完璧で、全く骨が立ちません。鱧の刺身は表面を軽く炙っているので、芳ばしい香りも広がります。
この日は、破竹がオススメとの事で、鴨と破竹の鍋仕立てをいただきました。鰹の出汁に鴨の旨みも相まって美味なスープ。破竹の香りや味を楽しんでもらうために、あっさり仕上げています。バランスがいい。
握り寿司は、てまり寿司。しめで、ちょこちょこつまむのに丁度いいです。
季節折々、美味しい食材はありますが、いい食材を生かすも殺すも、料理人の腕次第。
三好さんは、素材の良さを引き出すのが上手な料理人さんだと思います。(彼の謙虚で控えめな性格がよく出てるのかも)
三好さんの料理で日本の四季を感じ~日本酒を粋に愉しむ・・・大人の特権ですね・笑。
「いい素材を美味しく食べてもらいたい」そんな想いが伝わってくる
素敵なお店だと思います。(知人だから~の、ひいき抜きで・笑)
男性はもちろん。女子が一人でも入りやすいので、カウンターにかっこいいおひとり様女子が増えるといいな(´・ω・`)
