【2泊3日☆大分遠征】
今回の旅のメインはこちら。
2ヶ月程前に予約サイトOMAKASEで
空き枠を発見し訪問。
全ての食材に力強さがある
大将が生産者さんと共にと仰っていたが、
まさに調理技術に負けない力強いお野菜達が
見事に全てを成立させている。
鴨のお椀は大地と野生の香りがし
繊細さの中に大胆さが感じられる。
蕪のお椀もたくさんの種類の緑が複雑な旨味を出している。凄い。
車海老も素晴らしかった。
抜群の火入れも相まって味が濃いので
酢塩も良いが山葵だけ
もしくは何もつけなくても良い。
八寸も素晴らしい。大将が修行されていた
「銀座しのはら」の煌びやかな感じも好きだけれど、
私は「別府廣門」さんの八寸の方が断然好み。
穴熊は初めて頂いたので(たぶん)
比較はできないけれど。
臭みも無く脂身が美味。
もう少したくさん食べてみないと分からないかなぁ
→ただたくさん食べたいだけ(笑)
天ぷらも美味しかったなぁ。
野菜自体の味もだけれど、驚きの食感。
油との相性も凄く良い。
