鮨和紀の炭は宮崎県のうなま備長炭で、炭炙りが他の店と格段に違う!

アオリイカ(三重県)塩は新潟の藻塩
細かめに包丁がはいり、アオリイカのわりに少しねっとりさせてくれている

これも備長炭でめちゃくちゃ旨い!良い感じに脂を溶かしてて、シャリの温度とネタの温度が心地よい。
