1度目・伺うも定休日(>_<)
2度目・泊まり明けで伺おうとしたが、疲労で断念m(_ _)m
3度目・この日も明けだったが、取り合えず向かう事に・・・
店へ到着するも、誰もおらずΣ(゚Д゚)
入口横にあるピンポンを押したら、おっちゃん登場(^^)/
ショーケースを覗いたら、お目当ての品2つが残ってた\(◎o◎)/

聞けば何でも教えてくれるおっちゃんで、写真撮影も快く快諾してくれた♪
職場から向かったからクーラーボックスも保冷材もなかったので、慌ててコンビニで氷を購入(^^;
早速その日に調理。
~~~ 首(せせり)ミンチ 鍋編 ~~~
約500gも入ったせせりのミンチ。これを鍋の主役として頂く♪
合わす具材はネギ・生姜・ニンニク・岩塩・黒胡椒・片栗粉。
我が家の団子に普段ニンニクは入れないが、おっちゃんが入れると美味しいと教えてくれたので入れる事に。
みじん切りにしたネギや黒胡椒は多めの方がいいね!!
今回はシンプルに味わいたく、「ヤマキの白だし」を薄めに用意。
スプーンで一口大に丸めて鍋に入れると、黄色い脂がにじみ出てくる。
それと同時に灰汁もでるので、こまめに丁寧に取り除く。
全て投入したら、好みの野菜やきのこ類を投入し、ひと煮立ちさせて完成!!
ニンニク主張しすぎ!!(笑)
でもコーチンの脂が非常に甘く感じられ、ふっくらした団子は最高に旨い(≧▽≦)
残った汁は、当然きしめんで頂く(^^)/
それ以外にも使い道が・・・
~~~ 首(せせり) 塩焼き編 ~~~
約400gもパックに入ってた。
今回は塩焼き用に3分の2程度の量を使用する事に。
焼きやすい適度な大きさに切り、岩塩・黒胡椒・胡麻油で味付けし、なじむよう少し寝かせる。
我が家の卓上電気コンロを用意し、焼き上げたら完成♪
余分な脂は落ちるが、ジューシーさと強い歯応えが特徴的!!
お酒との相性を考え、黒胡椒を多い目の方がイイね(^^)/
もうこの時点でかなりの量の酒を飲み、いい気分(笑)
~~~ 首(せせり) 炊き込みご飯編 ~~~
塩焼きの時に残したせせりは、炊き込みご飯に使う事に。
当初は作る予定がなかったが、おっちゃんが「炊き込みご飯にしたら絶品」と言ってたので、急遽献立に追加(笑)
せせりは1~2センチに刻み、こんにゃく・椎茸・ニンジン・ごぼう・油揚げを用意。
醤油・酒・砂糖で、せせり・ニンジン・ごぼうを約10分炊く。
味がなじむように少し時間を置き、炊飯器にセット。
この時、先に煮汁を入れてから分量通りの水を入れないと、出来上がった時に悲惨な事になるよ(笑)
炊き上がったら、三つ葉を入れ、少し蒸らして完成♪
コーチンの上品な脂がご飯全体に染みわたり、出汁を入れなくても非常に旨い!!
コーチンの量が少し控えめだったが、もっと多くても良かったかな。
さて、ここで鍋の残り汁が登場!!
少し薄めに調整し、熱々の汁を三つ葉が乗ったご飯の上にかける。
これで「コーチン出汁茶漬け」の完成!!
炊き込みご飯も残った汁もキレイに平らげちゃった(≧▽≦)
節約中の我が家だが、コーチンせせりのフルコースのメインが1700円で購入出来たのは非常に嬉しい♪
一宮の田舎から春日井まではなかなか行けないが、どうしてもコーチンが食べたくなったらココまで出掛けるだろう。
可能であれば週1くらいで味わいたいが(笑)
