2013年4月現在、食べログ総合点数4.15のフレンチレストランエルルカン・ビスが鮨店をオープンさせたと知り、
期待のハードルを上げまくってのディナー訪問。
結果は、そのハードルの遥か上を行く満足度だった。
カウンター席の目の前には一面のガラス窓。
ライトアップされ、手入れの行き届いた庭が見える。
これだけの雰囲気を持つ鮨店は、福岡の鮨 麻生 平尾山荘しか思い浮かばない。
前菜はトウモロコシのムース、ウニトッピング。
初っ端から、鮨店と思えぬ一皿。
エルルカン・ビスのDNAを感じる。
続いて揚げ茄子のカマス巻き。
実に繊細な味付け。
お椀の後、鮨8品。
北海道直送 生のホッケ
金目鯛炙り
中トロ炙り
穴子
などなど。
ネタが良いだけでなく
細かい包丁や火の入れ方など
一貫一貫に施された仕事が舌に伝わる。
デザートは
アメーラトマトとライチのシャーベット。
続いて、白ゴマのブラジルプリン。
どちらもフレンチレストランの名店レベル。
エルルカン・ビスのオーナーシェフ・伊東さんは
数々のフランス料理の名店で経験を積んだ後、日本料理の名店、徳島・青柳でも修業され、
日本料理の技法をフランス料理に活かす第一人者となった。
今度は、その味の世界を鮨のフィールドに移植しようと思い立ち、それを体現できる料理長に出会ったことで、
この店のオープンに至ったそうだ。
料理長は自ら「鮨の経験が浅いので」と話す。
シャリの加減や握り方が合わない方もいるかもしれない。
が、私は何より料理に対する真摯な姿勢に心を打たれ、
この上ないお店の雰囲気と相まって、
他の店とは比べられないオンリーワンの名店として、強い感動を受けた。
このコースで1人6000円。
コストパフォーマンスも申し分なし。
あと半年もすれば、きっと予約の取れない店になるだろう。
