うなぎの名店と言われるところには
ひと通り行ったつもりです。。
で、思ったのは
うなぎってある程度のレベルに達すると
みんな美味しいし、その域において
あんまり違いは無いな、という事。
ていうか、
私の舌がその違いを判らないだけなんですが。
でも、違っていました。
伊東・うなぎのまとい。
他のうなぎ店とは一線を画してます。上を行っています。
私の舌でもわかります。
外はパリパリ、中はフワフワって
よく使う表現ですが
ここのうなぎは違います。
外はパリパリ、中はトロットロです。
うなぎを口に含むと香ばしいパリパリ感、
その後、身が口の中で溶けていく感じ。
これが外パリ中トロの正体です。
たれは甘くなく辛くなく濃くなく薄くなく。
極上のうなぎを引き立たせております。
御飯の硬さも完璧です。
上記はうな重の感想ですが、
もう一つのサプライズ、まぶし丼。
切った鰻にネギと山葵を少々加えて
御飯とまぶします。
鰻の油とたれが御飯に染み込んで実にいい味。
例えがイマイチですが、
ネギトロ丼的な口触りです。
カウンター奥の焼き台に並んだ串を
大将がじっと見計らって
絶妙のタイミングで引き上げる。
このザ職人的雰囲気が
この味を生んでいるのだなぁ、と思わず納得。
わざわざ行く価値のある、伊豆ナンバーワンのうなぎ店です。
