岡山駅から貸し切りタクシーで40分程の赤磐市の閑静な住宅街に佇む『すし処 ひさ田』。
全国の食通さん達から、岡山に『ひさ田』ありと全国に名を轟かせてきた、久田さんの寿司屋である。
久田さんは2020年、京都に紹介制・貸し切り制の『きう』をオープンさせたので、岡山の『ひさ田』は一年の内で春と秋の限られた期間の24日間しか営業しない寿司店になっている。
『ひた田』のカウンター10席は「きう」以上に予約至難で、寿司好きな人達から、幻の寿司屋と言われる所以である。
今回はなかなか取れない席を取れたので、東京の料理人さん達も誘い、久田大将の寿司を心ゆくまで堪能した。

◉久田大将の料理や寿司の世界観は素晴らしい!
先月、京都の「きう」で久田さんにお目にかかって2週間しか経ってないが、久田ワールドの本拠地での食事会は益々楽しく盛り上がった。
お店は「きう」同様に貸し切り制で友人だけしか居ないので、誰にも気兼ねなく過ごせるのがとても贅沢である。
美味すぎて楽しすぎて昼間から飲み過ぎてしまった!
東京から岡山まで久田大将に会いに来た甲斐がありました。
