サンセバスチャン市と縁のあるVISONのホテル内バスク料理。
サンセバスチャン通りを意識し、まずは厨房前で立ってつまみを頂く楽しい演出。サラッと出てくるセビーチェの美味しいこと。
気分を上げた後に席に着き、コースの始まり始まり。
スペイン料理といえば、分子料理のように何かを再構築して新しいお皿にしたり化学実験のような道具で作ったりとライブ感と驚きに溢れてるが、ここのはそういった楽しみと地産地消のホッとする雰囲気を兼ね備えていた。スペインのお米料理アロッソに地元の鹿肉をあわせペアリングのノンアルコールは蕎麦茶、といった感じ。貴重な熊野牛の素晴らしい赤身をスペイン伝統の豆料理と食べた後に、原点回帰というタイトルで小海老天ののったうどんが出たり。おぉ、、、と言いながらも、いやぁうまいなぁと言える。
席間は広く、店内はスマートで気取っておらず、シェフチームの癒し系の笑顔が素敵な、これだけでVISONにきてよかったと思えるレストランだと思う。
