400年以上の歴史を誇るミシュラン☆☆☆の瓢亭 本店さんの懐石料理、
ランチですら23000円↑と高額な上に敷居も高過ぎますので、こちらで京都二日目の
朝食を頂いてその片鱗に触れさせて頂くべく訪店させて頂きました(笑
食べログさんの情報では蹴上駅から徒歩5分(527m)となっていますが、
交通量のある道の信号もありますので、女性なら10分はみた方が
間違いないとは思われますね。
実際に自分達は7~8分で到着出来ました(笑
8時から1時間単位で予約を受け付ける居られる様ですが、早目に
着いても暖簾は出ており暖かい店内で待たせてもらえますので、
早目の訪店がお勧めです。
予約名を告げて席に案内されますが、この時点の仲居さんの立ち居振る舞いだけでも
接客が優良レベルである事をし~~~っかりと感じさせてもらえます(*_*;
着席するとおしぼりと“梅湯”から登場で、この梅湯がまた優しいお味でほっこりしますね!
店内、4人掛けのテーブルが基本ながら、増改築をして来たであろう建物で
その辺りも歴史を感じさせてくれますね(^.^)
朝がゆ 4500円(税・サービス料込み)
料理がすぐに運ばれて来て、仲居さんの「お始め下さい。」でスタートです。
八寸
薩摩芋の甘煮・瓢亭玉子・鴨・鯛のお寿司・ガリ・硬めの卵焼き?
どれも優しい味付けで美味ですが、鯛のお寿司が出色ですね(*^^)v
名物の “瓢亭玉子” 400年前は斬新な調理方法(卵を茹でる)だったのでしょうが、
某TVでフレンチの三國シェフが言っておられた通り「ただの茹で玉子!」ですね。
そこはそれ一子相伝の歴史を感じつつ美味しく完食させて頂きました(苦笑
因みに瓢亭では食材にも決まり事があって、鯛は明石の1.8~2.5kgの雌しか
お使いではないそうですのでこの卵にも拘りがあるんでしょうね(笑

どれも間違いのないお味ですが、中では中段の鰆が特に美味◎

豆腐自体が美味しい上に、出汁と塩加減が絶妙なバランスで○
おかゆ
入店してから個別に炊き上げるため30分程かかります。
葛を使った出汁の餡をかけて頂きますが、やや薄目で
京都の朝食である事をしっかりと実感させて頂きました(笑
こちらの “瓢亭玉子” 話のネタにはなりますので、頂くべき一品ですが、
それよりもこちらだけが特注で使っている鮪節でとった一番出汁と二番出汁を使った
煮物こそが、このお店の真骨頂でしょうね!(^^)!
こちらの14代目、京都の数多の料理人の中でも屈指の出汁をひく名人の様ですので、
出汁を味わうべきお店でありまする(笑
