桂の美しいカウンターの中央の席へ案内された。
高級寿司店の経験が乏しく緊張気味の貧乏サラリーマン(笑)
そして右隣には、スマホで料理の写真を撮影している綺麗なおひとりさま女性。

先ずは生ビールを飲みながら、摘みの一品目、ヒラメ。
「岩海苔を巻いて、塩でも醤油でも美味しいですよ」
と大将が言うとおりにヒラメで岩海苔を巻いていただく。
魔法をかけられたような味わい!
二品目の銀杏は馴染みある普段呑みのあて。
少し緊張が和らぐ・・・
夏の旬、北海縞海老。
家族で一度だけ旅行して野付半島の民宿で食べたのを懐かしく思い出す。
美味しくて殻ごと食べたっけ。
毛蟹。
今年は毛蟹が不漁で実家にはタラバを買って行ったが・・・
あるところにはあるものだ。
旨い!
毛蟹と雲丹の茶碗蒸し。
毛蟹の旨味と滑らかな舌触りの雲丹が絶品!
太刀魚は刻みネギ添え。
葱と太刀魚の相性が意外にも良い。
そして摘みのラスト、鮎の塩焼きは何と!ペースト状で提供された。
素晴らしい摘みが終わり、握りが始まる前に、シャリの好みを訊かれた。ランチも美瑛の絶品イタリアンをいただいたので、極力小さいシャリをお願いした。
ボタン海老、ホタテ、北寄貝、毛蟹。
下味の付いたネタとシャリの相性は抜群!
そして、今宵のハイライトは雲丹!
