小田原駅で昼食の後、湯河原の老舗旅館ふきやへ。
黄金週間前の平日は、幸運にもお客の入りは疎らで、貸切風呂が使いたい放題(* ̄∇ ̄)ノ
夕食は夜6時に予約したが、30分くらい前から準備が始まった。
長い準備の時間を経て、ようやく定刻の夜6時に配膳が始まった。
⚫️先付
順菜に独活、うすい豆の冷製茶碗蒸し。初端からセンスの良さを感じ、期待が膨らむ。
⚫️前菜
数々の春の旬。菖蒲が添えられたセンス冴え渡る皿。小茄子田楽は初夏の先取りを思わせる。くみゆば生雲丹は、湯葉と雲丹の絶妙なマリアージュ。鳥貝梅肉和えは、鳥貝に繊細な梅の酸味。
⚫️造り
初鰹、石鯛、アイナメ。新鮮な刺身に、粉醤油とポン酢を付けていただいた。
⚫️伊勢海老の具足煮
プリップリの伊勢海老と出汁。タケノコ、蕗、木の芽が添えられている。
⚫️活アナゴのしゃぶしゃぶ
当日まで生きていたアナゴをしゃぶしゃぶで。新玉ねぎ、根三つ葉といただく。
⚫️強肴
マスの大葉焼き、地元の牛の柏葉焼き、桜海老のかき揚げ。
⚫️酢の物
もずくと毛蟹。
⚫️金目ご飯
金目鯛の炊き込みご飯。金目鯛の煮付けとご飯の組合せを想像していると、完全に裏をかかれる、繊細な味わい。一緒にいただくお新香も塩気が押えられた薄味で繊細な味わい。
⚫️水菓子
グリーンピースのムースが旨い(* ̄∇ ̄)ノ
料理人の松下裕一氏は現在56歳。
以前は京都でご活躍されていたとか。
2013年にミシュラン1つ星を獲得したというだけあって、繊細な味わいの懐石は秀逸であった。
