久し振りの九州。まずは此方からスタート。
外観は普通の一戸建ての家のようですが、内装は渋くてかつ凛とした設えです。
大将はまだお若そうな男前。物腰が柔らかく、終始にこやかな表情ですが、
何処と無くピシッと筋が通った印象。
しばらくすると、土鍋で炊いたご飯が炊き上がり、目の前でシャリ作りからスタートです。
生でシャリ作りを見るのは初めてでしたので興味津々。
さて、お任せで頂いた品は此方。

とろみのついた生姜味のダシ醤油で頂きます。

三日間寝かして、低温で火入れしています。口の中で解ける新食感。
【佐渡の鰤】
10日間寝かせています。
【鰆】
6キロ物を藁で燻していて香りが鼻腔をくすぐります。
【大分のかます】
これも軽く炙ってあり、脂が良い加減になっています。
【北海道のバフン雲丹】
手渡しで頂きます。
【対馬の穴子】
ふんわりと炙っています。ツメも良い塩梅。

白ワインのゼリーにキウイ
シャリのほどけ具合はいいものの、硬めで塩分が強く感じられ、個人的には寿司としての
好みから多少外れますが、それを補って余りある鮨ネタのクオリティー。
熟成させた物や適度な火入れや香り付けなど、とてもいい仕事が施されています。
にも関わらず、料金は片手で収まる高コスパ。
夜明け前から車を走らせて伺いましたが、それだけの価値があるお店でした。
