久しぶりに、嫁が活躍して予約出来た「鮨みなと」
店は旭川駅前から徒歩10分くらいだが、
当日は生憎の雨、タクシーをつかまえホテルから
店へ向かう。
訪問したのは10月の中旬。18時の予約だが、10分前
に店に到着、一番のり。だが、店はまだ準備中。
程なく丁寧な接客を受けて店に入店。大将の前の
特等席に案内される。事前に予約したのは、
おまかせコース 15,000円。
普段の私のレビューは”全て凄く美味しい”とか、
”どれも旨い”とかで手抜きだが、今回は貧弱な語彙
ではあるが真面目に食レポをを記載する(笑)
薄切り松皮鰈は歯応えも良く爽やかな旨味が
口の中に広がる。噴火湾のツブ貝、凄く新鮮で
コリコリの触感で甘い。臭みは一切なし。
手渡しで頂く春子の昆布締めとインゲン醤油煮
は驚きの組み合わせ。天才だっ!
宗谷のホタテの出汁はホタテの香りと旨味が凝縮。
揚げたホタテの身を入れると更に鮮明になる。
戻り鰹は爽やか旨味で、もっと食べたいとの脳と口が
要求する。深海に棲むメヒカリは脂がのって、皮目の
パリパリと柔らかな身のコントラストが素晴らしい。
新鮮なカワハギと肝と酢飯を和えた物が不味い訳が
ない。肝ソースはほんの少しのポン酢で伸ばしてある。
うん、旨い!旨すぎる。
穴子の白焼きポン酢は穴子の脂をポン酢が緩和し、
香草と一緒に食べると口の中は爽やか旨味で
満たされる。
余市のあん肝の出汁煮は、今までで食べたあん肝
の中では一番好み。あん肝の嫌な脂の風味が抜け
て旨味だけが凝縮されている。
良い塩梅に焦げ目が付いたのど黒の巻物が不味い
訳がない。おかわりしたい(笑)三食これでも良い。
鰤の生ハムは初めて食べる。素材を大将に問われ
2回目の回答で正解。これは日本酒がすすむ。
鰊は脂ののり具合が最高。炙り北寄貝は甘く旨く
食感も良い。ボタン海老は熟成のネットリとは、
正反対のブリブリの食感で甘くて美味しい。
ホタテの握りは貝柱を繊維に逆らわず、手で捌いて
いるので、口の中で繊維と歯が直角に交わり、
ただでさえ美味しいホタテの握りが更に斜め上を行く。
蟹みそで和えた毛蟹の握りも甘く旨く、何個でも食べ
られる。太助があれば鮪の中トロはいらない。鰯は
凄く新鮮で脂ののりも良い。それなりの型の鰯だ。
昆布森の馬糞雲丹も新物イクラも想像の通り。
炙りキンキは想像を超える美味しさ。何とも言えない
食感と脂ののり。これほど美味しいキンキは数年前に
「鮨一幸」で食べた以来だ。
鱈の白子の質も良い。とろける味わい。〆の穴子も
普通に美味しい。

お会計は二人で日本酒、焼酎、ビールにワインを
沢山飲んでも43,670円。一人あたり2万とちょっと。
鮨の量と質を考えれば凄ーくリーズナブル!!!
