時雨月、錦秋湖も色付き始め、雁渡りも始まる、生憎今日は雨模様、早めに宿へ、今宵は山間にひっそりと佇むこちら、ここは千年の歴史を誇る知る人ぞ知る湯治場、湯川。可愛らしいフロントで受付を済ませて、外廊下を通って部屋に案内してもらう。お部屋はメゾネットで、下がリビング、上が寝室、まずは部屋の風呂に入って温まる。湯に浸かり、ビールで喉を潤しながら、雨音を聞き雨景色を眺め心を整える。
夕食は福膳坊で頂く、木の骨組みのままのインテリアや木の家具が温かみを醸し出し、隣とも程よい距離感が取られている。
◆「食前酒」は、岩手県産白ワインのカクテル。発泡性があって端麗辛口、飲みやすい。
◆「先付け」は、旬の野菜のバーニャカウダ。旬の採れたて野菜を新鮮な岩魚の塩漬け、にんにく、生クリーム、オリーブオイルなどから作った特製熱々のオリジナルソースで頂く。ワインか冷酒か迷った末に、秋田横手の浅舞酒造の純米大吟醸天の戸(950円)をお願いする。
◆「前八寸」は、上から黄色の器に入った舞茸と人参のマリネ、右隣りの赤い器が芋の子黒胡麻煮、その横が蓮華に乗ったほうき茸その上には南部地鶏笹身のコンソメ仕立てと菊煮にココの実添え、下に行ってミズコブのお浸し、左横が岩魚と畑しめじの春巻き、その上が無花果の生ハム巻きとリコッタチーズ、最後が短角牛のロースト。マリネは舞茸の味がしっかりあって木の芽が良いアクセント、芋の子もほうき茸も見た目以上にあっさりとした味わい冷酒によく合う、ミズコブはシャキシャキ食感、春巻きは岩魚の苦味としめじの食感がとても面白い、生ハムは無花果の甘さとチーズのまったりがよく合う、ローストビーフはソースが甘辛く美味しい、ナツメも添えられ、まさに秋の宝石箱。
◆「揚げ物」は、八幡平マッシュルームのカダイフ包み揚げと舞茸の炙り焼。舞茸はとても瑞々しい、カダイフはとても大きなマッシュルーム、茗荷、檸檬、ピクルスと色々な酸味を楽しむ。
◆「椀の物」は、ばくろう茸と南部地鶏のパイ包み。ばくろう茸は別名香茸、馬も喰うほど香るので馬喰茸と呼ばれる高級きのこ。パイを割ると閉じ込められていたばくろう茸の香りが一気に立ち込める、コクがあってこってりとしたクリーム仕立て、パイを崩しながら美味しく頂く。まるで懐かしいオニオンスッペのよう。
◆「冷し鉢」は、ここの特産、西わらびの一本漬け。大きなわらび、冷たくて唐辛子がピリッと効いて、筋も無く柔らかく食べ易い、蕩けるような食感。
◆「煮物」は、喜知次のすっぽん出汁煮。ここ西和賀湯川では長年温泉水を使ってすっぽんを養殖して来たとのこと、温泉街界隈ではすっぽんを出す旅館もある、そのコラーゲンたっぷりの滋養のある出汁で三陸産高級魚喜知次を土鍋で丸ごと炊いた贅沢な一品。喜知次は焼き目が入って香ばしく、身には脂が乗ってコラーゲンでとろとろのスープが絡んで、滋味深くとても美味しい。
◆「焼き物」は、白金ポークのロースト。花巻で生産された日本一に輝いた白金ポークを、素材の旨味をしっかり引き出すべく低温調理し、最後は南部鉄器で焼き目を付け香ばしく仕上げている。付け合わせにブロッコリーとカリフラワーを添え、粗びきトマトソースを掛けた一品。ポークは柔らかく素材の味を大切にしている。
◆「ご飯」は、松茸と南部地鶏の炊き込みご飯。三つ葉とすだちを添え、薬味にナンプラーと万願寺唐辛子、味噌と胡麻油、檸檬とトマト柚子胡椒を加えた三種の薬味で味の変化を楽しめる。松茸の香りが立ち込める、そしてどの薬味ともよく合い、味変わりを楽しめる。
◆「水菓子」は、シャインマスカットの粒にそのゼリーと枝豆のムースのカクテル。さっぱりとした爽やかなシャインマスカットが美味しい、そしてゼリーだけでも美味しいが、枝豆のムースが意外にもアクセントになっていて不思議な組み合わせ。コーヒーと一緒に美味しく頂く。
全九品、西和賀、横手、岩手三陸と地元旬の秋の食材を、採れ立て新鮮そのままで、素材の味を大切に、和洋折衷のフュージョン、色々な創作で、一品一品テーマがあって素晴らしい料理の数々だった、ここでしか味わえない秋の味覚を堪能させて頂いたご馳走様、またスタッフの方々の笑顔と気配りが素晴らしく心地よく過ごさせて頂いた。ここは自然に抱かれた山のオーベルジュ、季節の味を頂きにまた再訪したい。
