いつも家庭で作る馬肉鍋はテキトーな味付けのため「お店ではどんなんだろ?」と思い、吉兆さんを訪問。
注文したのは、独特な鉄板鍋でいただく馬肉焼肉の「義経鍋」と平鍋で調理して味噌味の「馬肉鍋」。それぞれ2人前。鍋2連チャンです。
まずは「義経鍋」から。
到着した馬肉は遠目でも分かるいいお肉です。
熱した鉄板に脂が溶けるのを待ってから肉を焼き、いざ実食。
うまい!肉の中に残った脂も水のようにサラサラしていて口中に何の引っかかりもない感じ。
ゆっくり食べたいけど美味しすぎてガツガツいきたい、そんな葛藤が生まれるお料理です。
続いては「馬肉鍋」。
濃いめの味噌味。溶いた卵につけながらいただきます。熱々のお肉とかやきせんべいが見事にマッチ。
これはガッつけるお料理です。
贅沢をさせてもらいました。美味しかった!
