大変美味しくいただきました。
大将の橋本さんの、マニアックなまでの魚や食材に対する細部へのこだわり。熟成させ旨味を凝縮させたお魚に、うっとりさせていただきました。
関西人なので、小肌には執着が無かったのですが、初めて「なんて美味しい小肌!」と感じたのには、自分自身で感動致しました。
赤身の漬けを湯掛けしたり、さわらを藁で燻してたりと、細かい仕事が織りなす官能と至福の時間を堪能させていただきました。
玄関に立つと木の香り、素晴らしい白木のカウンターとシンプルな店内が清々しい。
